Is it just me or do you crave more salads in the summer? The cool lettuce and fresh fruit sound so tasty and refreshing on a warm summer day! Here’s a tasty salad I whipped up the other night for dinner. It’s bound to keep your taste buds happy, your tummy flat and your belly full!
Butternut Squash & Brussels Sprout Summer Salad with Blackberry Dressing
1 cup baked or steamed Butternut squash
1 cup steamed Brussels sprouts
2 cups lettuce- romaine & butter lettuce are good! I used a mixture of romaine, kale and Swiss chard- had to use them before they went bad 🙂
pumpkin, sunflower seeds, slivered almonds or walnuts to taste or preference
You won’t believe how easy this is!
1 cup of blackberris
1/4 tsp white balsamice
I hope you enjoy! The best part is that all of these ingredients will keep your skin glowing and healthy. Which we probably need after all the time spent in the sun!
P.s. It’s really easy to steam your veggies in the microwave. All you have to do is chop them up, place them in a glass dish or bow filled half way with water and cook for about 5-10 minutes. I use one similar to this and all you have to do is turn it upside down to drain the water.
