Good Morning Lovelies! Happy Wednesday! Today, I am posting a simple recipe for a quick summer salad.
Quinoa & Baked Cinnamon Apple Salad
1 apple (fuji is sweet)
1 cups chopped kale
1 cup steamed brussels sprouts
1 cup quinoa
1 cup blackberries
a few mint leaves
1/4 teaspoon white balsamic or water
- Pre heat the oven to 350 degrees. Cut apples into slices, place them on an ungreased cookie sheet and sprinkle cinnamon on top. Bake for 10 minutes.
Steam brussels sprouts in microwave for 10 minutes.
Throw on top of kale and quinoa- cook if needed or use left over quinoa
Combine the rest of the ingredients in a blender and pour on top of your salad.
