Hello Lovelies! Happy Wednesday! I hope everyone has had a pleasant week so far! We made it to the midway point.. I have just come back from my family reunion and it reminded me of the most important things in life, the things money can’t buy.. family, friends, positivity, happiness, relaxation and fun. It was our 55th family reunion! Can you believe that? Definitely a great way to start my week.
I had my teeth cleaned this morning and the hygienist and I were talking about food and health and she introduced cauliflower rice to me.. and it’s just like it sounds. So naturally I had to go home and try it out! It must have been meant to be because I happen to have cauliflower in my fridge (which I never do). Here’s the super quick and simple recipe.. the whole thing probably takes about 15 minutes to prepare and cook.
1 head of cauliflower
1-2 garlic cloves minced (I LOVE garlic, so the more the merrier for me!)
5 basil leaves, chopped
2 tablespoons coocnut oil- this gives it a buttery taste without the dairy + you’re getting the benefits of coconuts!
- Chop off the stems off the cauliflower right before you get to the bushy/flowery part of it. Either throw the stems away or chop them up very finely (why waste something so amazing? I threw them in for more crunch) along with the tops of the cauliflower until they look similar to grains of rice.
Add the cauliflower to a saucepan along with the rest of the ingredients (salt, pepper & thyme to taste) and cook on medium-low heat heat for 5 to minutes.
** Feel free to add whatever else you’d like to flavor it with and use as a side dish, eat it alone or add it to another dish.. the possibilities are endless!
I added some brussels sprouts to the mix to make it more filling plus nutritional yeast that I can’t get enough of now a days.. it gives things a cheesy flavor which I love!
