Happy Sunday, Lovelies! I hope you all have had a great weekend. I am bummed that it’s almost over but next weekend is a three day weekend! Even though I hate that time is flying so fast I am so excited to get closer and closer to the first day of school (who would’ve thought I’d ever get that excited). I have gotten all of my books and actually was such a nerd and started reading one of them. So many great opportunities have come my way and I couldn’t be more grateful for them. So excited to see what comes up in the future!.. Now back to my recipe 🙂

I just learned that you can sprout black and was really excited to find that out. I love them but my stomach doesn’t love them so much so I have to limit them in my diet.. up until now. Sprouting breaks down the outer layer of the beans that your body can’t digest which leads to all of those uncomfortable feelings after you eat them. It does take some time to sprout them but if you do a lot at a time they will last a few days. You can either cook them after or eat them raw. I chose to cook mine. I wanted to make something with them but wasn’t sure what to make. Once I looked around my kitchen and noticed mangoes I thought about how good they would be with mango salsa and in a burrito but I also wanted some lettuce and all of that won’t fit in a tortilla so I decided to make a bowl!

Sprouted Black Bean Burrito Bowl


2 cups sprouted black beans- refer back to my video on how to sprout

½ cup chopped mango

½ cup chopped tomato

¼ cup onion

½ cup sweet bell pepper

1 cup kale

½ avocado

Fresh juice of 2 lime

cayenne pepper



This recipe is quick to throw together. The only thing that will take some time is sprouting your beans but that’s optional. Once your beans are sprouted you can cook them or eat them raw. Chop up all ingredients and combine them in a bow, squeeze lime juice on top, sprinkle with salt and cayenne pepper and mix together.
