I hope everyone is staying cool in this crazy heat. It was over 100 degrees yesterday! I think I’m throwing out some winter vibes because I decided to make a creamy tomato soup recipe. It tastes just as good cold as it does warm!
Creamy Tomato Soup
1 small to medium sweet potato
¼ cup of carrots
8 basil leaves
1-2 cloves of garlic
1 Tbs thyme
1 Tbs nutritional yeast
½ Tsp nutmeg
1.Peel and steam the sweet potato. You can either steam the sweet potato in the microwave for 10 minutes or boil it for 10-15 minutes until soft.
2.Combine the rest of the ingredients and blend in a blender or food processor until it’s at the consistency you like. You can wait to add the sweet potato or add it after it’s done cooking.
This whole recipe should take around 10 minutes to make! The beauty of this soup is that you can enjoy hot or cold.
